  • 1 ΒΎ cups (350g) sugar
  • Β½ cup (120ml) vegetable oil
  • 1 cup (245g) plain yogurt
  • 3 large eggs
  • Zest of 1 lemon
  • 2 teaspoons (10ml) vanilla extract
  • 2 teaspoons (10g) baking powder
  • Β½ teaspoon (2.5g) baking soda
  • Β½ teaspoon (2.5g) salt
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350Β°F (180Β°C). Grease and flour a 10-inch (25cm) bundt pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the vegetable oil, plain yogurt, eggs, lemon zest, and vanilla extract. Mix well.
  4. Add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  5. Pour the batter into the prepared bundt pan.
  6. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
  8. Dust with powdered sugar before serving.
